I adapted these pancakes from Food52 as they reminded me of the potato pancakes my grandfather used to make. These are a healthier version and they taste amazing!
Great with salads, shrimp, as a starter or a meal on their own.
- 1 large cauliflower
- 4 green onions
- 4 garlic cloves
- handful of parsley
- 3/4 cup parmesan cheese
- 1/2 cup grated mozzarella
- 1 cup flour
- 1 cup whole milk
- olive oil
- salt and pepper
Boil cauliflower until tender. Drain and set aside until cool. When cool, mash into small chunks or use hands to crumble.
Saute shallots and garlic in olive oil until fragrant. Add to cauliflower. Mix in eggs, and season with salt and pepper. Add flour and water gradually to make a pancake like mixture. Add in cheese and chopped parsley.
Heat a pan coated in oil. form patties with the mix with your hands and drop into oiled pan. Use hands and spatula to mold pancake. This will take some trial and error.
Brown on each side, 3-5 minutes.
Can be kept in container for 5 days and heated in microwave.
